Protein Banana Bread

I don’t know about you, but I love banana bread; the way it smells, the way it tastes, the way it makes my heart happy.  Thanks to my step-daughters’ grandma aka Grand Mary, I received the best banana bread recipe ever.  

My challenge was to make it a bit more macro friendly.  I tried using applesauce instead of eggs to reduce fat, but it was way too mushy.  I tried increasing the protein to Bisquick ratio, but it was way too dry.  I finally came up with a recipe that tastes exactly like Grand Mary’s famous banana bread.  I’ll keep playing around with it to see if I can bring the carbs and fat down even more, but in the meantime, I make this every week.

Serving Size = ⅛ loaf (which is a pretty huge slice)

Macros per serving without walnuts:
Calories – 280
Protein  – 11.4 grams
Fat – 13.8 grams
Carbs – 33 grams

Ingredients:
 ⅓ cup vegetable oil
½ cup mashed ripe bananas (about 3 large)
½ tsp. Vanilla
3 eggs
2 cups Bisquick
½ cup Naked Whey protein powder
1 cup baking stevia
2 tsp Stevia brown sugar blend
½ cup chopped walnuts (optional)

Directions:
Heat oven to 350 degrees.
Spray PAM in bottom of 9x5x3 loaf pan
Stir all ingredients together.
Beat vigorously with fork 1 minute.
Bake 55-65 minutes – until toothpick inserted in center comes out clean.
Cool 5 minutes.
Run knife or metal spatula around sides of loaf to loosen;remove from pan.
Eat it and enjoy!

Makes 1 loaf.
