Everyone loves pancakes. They epitomize comfort food: sweet, delicious, make you feel warm and fuzzy, remind you of being a kid again. That’s what they do for me anyway. So maybe not everyone loves pancakes, but I sure do!
I’ve been tweaking my protein pancakes recipe for years, and I finally got it right. It’s even toddler approved, which is a huge bonus. The macros make them perfect post workout. You can even throw some maple syrup on there for some extra goodness in your mouth. So, with no further ado, here is the recipe:
Servings – 12
Macros per pancake:
Calories – 140
Carbs – 17 grams
Fat – 1.7 grams
Protein – 13 grams
Ingredients:
1 cup Domata Gluten Free Recipe Ready flour
3/4 cup Fage 2% Greek Yogurt
3 oz Sprite (this makes the pancakes extra fluffy. You may omit this and subtract 9.5 g carbs)
3 scoops Vanilla Whey Protein Powder
1 cup Blueberries
2 cups Liquid Egg Whites
1 Whole Egg
100g Banana
145g Blueberries
1 tsp Vanilla Extract
1/2 tsp Almond Extract
Directions:
Throw everything in KitchenAid mixer
Mix for 5 minutes or until everything is well incorporated
Use 1/2 c measuring cup to scoop batter onto griddle
Flip when top is bubbly
Boom! You have an awesome post-workout snack and a delicious breakfast!
