Yesterday, I felt completely uninspired when it came to food. I don’t know if it was my business with the clinic or if I’m just sick of eating clean, but I definitely felt a little bored. I’ll be honest, I’ve had some funky food cravings. I woke up the other day wantingFrench toast. I haven’t even eaten French toast in at least 6 months. I also miss my occasional glass of wine. It’s funny, I totally thought Chad & I were 80/20 when it came to clean eating. Now, I’m beginning to think we were more like 65/35. This Whole30 has definitely been eye-opening.

For breakfast we had pumpkin pie smoothies, which were actually quite delicious. I used to make them with vanilla protein powder, but we’re doing zero processed foods so for protein we used egg whites. If you want to make it at home, simply put ice, coconut milk, pumpkin puree (make sure it’s not the pumpkin pie filling, I made that mistake once before and it was a delicious overly sweetened disaster), vanilla extract (the organic, real stuff), egg whites (depending on your protein requirements), Medjool dates (1 or 2), and pumpkin pie spice. Blend it all up and top it with some Macadamia nuts for a delicious treat.
For lunch, I had leftovers. I mixed together the Mongolian grill leftovers with the breakfast leftover from the day before, poured copious amounts of curry on the blend, and nuked it. It tasted all right. Pretty boring.
For my afternoon snack, I had some pistachios, an apple, and some turkey slices. Again, I say boring 😦
Dinner was nice. Chad cooked some chili with acorn squash, organic grass-fed beef, and lots of veggies (onions, garlic, mushrooms, red & yellow bell peppers). He seasoned it up beautifully. I know I tasted cumin and black pepper. I’m not sure what other seasonings he used. It was really appreciated since I was teaching an Elements class at 7pm and didn’t want to have to cook at 8pm. It was so nice to not lift a finger after finishing up an awesomely challenging day work! The only thing missing was a cold glass of Viogner. Mmmmmm….white wine. That would have been the perfect thing to top it off. I’m really
