Real Food Dessert – Newton’s Acorn Squash

I had been eating super clean for awhile; however I was attacked by a killer sweet tooth the other day.  I didn’t know what to do.  I frantically searched the kitchen for something to satiate the desire.  There was nothing!  I knew I had to get creative:

Ingredients:
1 acorn squash
1 large apple
1/2 c Craisins
1/4 c coconut milk
Walnuts
Coconut oil
Cinnamon
Nutmeg
Honey

Directions:
1.  Cut the acorn squash in half, scoop out the seeds, and toss them
2.  Bake the squash until it’s soft on the inside
3.  While your squash is baking, heat some coconut oil in a pan
4.  Sautee apple and craisins in coconut oil
5.  After squash is soft, scoop out the meat and toss it in the pan with the apple mixture
6.  Add coconut milk, nutmeg and cinnamon and stir until all ingredients are thoroughly mixed
7.  Stir it up and fill both halves of squash with mixture
8.  Sprinkle walnuts on top and drizzle with honey
9.  Eat and enjoy 🙂

May not look pretty, but it sure tastes delicious!
